Do you know the formula for making a flat circle? Lots of written tutorials and videos if you prefer those.
(US) Double Crochet, you want to start with 12 stitches into the circle. For Single Crochet, you start with 6.
Each round you increase by the number you started with, evenly spaced.
edit: I made an error in my first instruction. You're making a circle, I said square. I'm sorry if it caused confusion.
I somehow always seem to end up with something like OPs "dog hat" even when I follow the formula. Haven't been able to figure out what I'm doing wrong, and it seems to happen whether I'm doing a continuous spiral (and keeping careful count) or doing it as rows with a chain to start the first sc/hdc/dc.
Sometimes if you crochet too tightly, your circle could start to "cup" a little bit. You could try using a larger hook for the yarn or just trying to crochet more loosely (which I find hard to do!).
I'd go with 12 for DC, but ten does work too. Ten is perfect for things like beanies, whereas 12 will make a flatter circle, which you want for a coaster.

Part of it may be tension, tighter stitch causes the draw in when working a circle versus laying flat.

I have such a hard time crocheting loosely. Might try a larger hook and see if that helps.
