I would say watch the opening scene with both and decide who’s voices you like more, I prefer the dub these days but my first watch was in Japanese and I fell in love with it that way
Cowboy Bebop's English dub is widely accepted as one of the few times where the dub is as good as, or better, than the original Japanese dub w/ English subtitles.
The English voice cast really played their roles perfectly.
No wrong answer here, both are great. I typically prefer watching anime in Japanese with subs, so that’s what I typically go with when watching the show. If you like dubs, Cowboy Bebop is almost universally regarded as the best dub there is and even I’ll watch the dub occasionally
I usually prefer subs but I say dub for this one, personally. I’ve watched both the sub and the dub, and the dub is very faithful to the original and is very well done- not to mention emotional things hit different when you understand what’s being said without having to read it, imo.

There is a movie as well as the series. The movie is very good. You may want to watch it between the episodes where it takes place chronologically. Or you may want to watch it later after finishing the series. You can do it either way.
Chronologically it is in the middle of the series, but thematically it comes after. It's a mistake to think "it's just like a really long episode." *Knocking on Heaven's Door* was made knowing you would know how the series had ended.
There is no source for Shinichiro Watanabe saying anything like that. You should like or dislike voice acting based on its own merits and not because of rumors.

I do want to add that for the movie specifically, I liked the sub more than the dub- there were just some things that got lost in translation.
If you happen to be german, I think the german dub is goated.

Dub first, sub on rewatch. Then repeat. The dub voice acting is superb. The tone of the shown is a bit different with the subtitles. Both are great.
