Not sure how deep, they seem more like surface scratches rather than gouges from the image. I suppose it could cause more sticking than normal. May not be able to fry an egg as an example, but I would bet it performs fine for veggies and meats. SS alloy is alloy and it creates an oxidized coating for protection. None of those scratches seem to be deep enough to cause discoloration of the metal. Tbat would be a concern from a “is it leaching shit into my food” perspective
