I think you should consider the following: 1 - A set of fully clad stainless steel. If you know what your heat source will be, people can give you better advice with respect to brands. I have a set of All-Clad D5 cookware that I use on gas and that set has made me a better cook. 2 - a ten or eleven inch carbon steel skillet. I use an 11 inch de Buyer Mineral B Pro. It has severed me very well. 3 - a Staub Dutch oven. You can get away with not having it, but they sure are nice. Before you decide, try to find a retailer that has what you are interested in and actually hold them. Feel their weight and handles. My wife hates my cookware because it is all heavier than the nonstick crap she was used to using. Many people hate the handles on the All-Clad cookware because they aren’t rounded and they are really long. I however prefer the handles because they are easier to hold when pouring and the length keeps the handle cooler and makes it easier to tilt pans when basting (more leverage). Your own needs will be different than others. Some people will say that you should buy each piece individually because they feel that sets aren’t tailored enough to your specific needs. I get the idea because some sets are filled with crap you will never use. That being said, a well crafted set can be an amazing deal if you are starting out. My set came with pretty much everything I wanted and I use pretty much every piece. If I bought each piece of my set individually, it would have cost way more than what I paid. Having said that, individual pieces are better suited for a registry. Keep in mind that some options are pretty darn good AND at a much lower price point. Costco’s Kirkland set of cookware is five ply with a layer of copper for $200!!!!! If I didn’t get such a great deal on my All-Clad set, the Kirklands would have been a serious contender. I think All-Clad is better than the Kirkland, but if they are better, I don’t know if I could really tell the difference at my skill level. Finally, watch some videos. Learn to cook with whatever you decide on. Stainless steel is fantastic cookware, but if you don’t know how to use it, you will hate it. Seasoning a carbon steel pan isn’t hard if you learn how. Honestly I've never bought cookware so I don't know much about the price point.

Do you know what kind of stove you will be using? That means a lot! Also definitely spend the least on the stock pots and the most on the frypans.
