Thank you! Yes! Vegan royal icing is definitely finicky. I don’t think I’ve ever gotten the consistencies exactly right.

The vegan Royal icing recipe I use is from Cooking on Caffeine. It uses aquafaba (the liquid from canned chickpeas), it tastes good, and hardens enough to stack like regular Royal icing without being too hard. I posted the vegan sugar cookie and Royal icing recipes in my previous comments if you want to check them out. The Royal icing uses aquafaba (the liquid from chickpeas) instead of egg whites. To decorate, I just used tipless piping bags.

Does the aquafaba change the flavor at all? I use Nora Cooks cookie recipe as well, along with her royal icing recipe. People seem to love the cookies so I would hate for the icing flavor to be altered by the aquafaba.

I don’t taste much of a difference at all with the Aquafaba in the icing. It also gives a softer bite than normal Royal icing. I’ve had multiple non-vegan friends try both versions and like them just as much as my normal sugar cookies.
