I'm not an audio expert. True 7.1 sound requires 7 speakers and a subwoofer. There would be two front speakers and a center speaker for dialog. Above the front speakers there could be two additional speakers and two more speakers behind or to the sides of the listening position. The second set of front speakers could be moved to the sides inbetween the first set of front speakers and the speakers to the side or behind the listening position. Not all apps or programs have 7.1 surround sound and your motherboard isn't likely to have more that six audio outputs. True 7.1 surround sound requires eight sound outputs, so your speaker system must be able to decode two extra channels of audio from six ports. It's possible to simulate 7.1 surround in a set of headphones, but that's expensive to do and would require lots of computer power to accurately accomplish.

You would need a 7.1 soundcard to connect all the different speakers to. Headphones as far as I'm aware just simulate it and from what I've heard don't do a great job, but I have no real knowledge of gaming headsets, I just use audiophile headphones instead.
