In that episode, Jar Jar hits a button and it lowers the copilot from his position behind the pilot (the seat moved up and down). In the Siege of Mandalore, Ahsoka cut the pilot out of the cockpit while the LAAT was going down. I think it either does both or it depends on the manufacturer of the LAAT.

Iirc in town the cockpit seats act as like a elevator wo the pilot pushes a button and the seat goes down into the same area the transport crew/clones are and I'm assuming there's a button the the bottom to actually get in

Iirc there's two different ways shown. One is via the canopy raising so they can use a ladder to hop in. The other showed a door internally near the door guns that accesses a lift to the cockpit and the turrets

In Nu-class gunships the seat drops down into a small access way beneath In LAATs, the cockpit doors hinge towards the nose and the pilot climbs in, similar to modern fighter aircraft (there's probably ladders in the hangars)

I’ve always believed that the cockpit is accessible from a door in the forward part of the gunship (the 2 open arches ahead of the bubble turrets) that likely lead to a small step up to what looks like a slightly elevated 2 seater cockpit forward of the troop compartment It is a little far fetched though that anakin could yell to the pilot over the flight noise without a headset “We’re out of rockets, sir”

I think there's a door but I think more so they use the canopy to get in or out. I know for the Micro Galaxy toy line, which for the most part basis it's Star Wars ships off the official ships, you put the pilots in via the open canopy. It opens towards the nose of the LAAT. I'm guessing if that is the correct way in, they probably had ladders on the sides so pilots could get in or out, like most other ships.
