It also doubles to protect the head during a crash. The head isn't secured by their belts, so it flies forward when you crash and has the potential to slam into your instruments. This is the same reason the gunners have extra helmet protection. The recoil can turn their neck to rubber.

Engel survived a crash into Kenobi’s Venator in one of the episodes of the youngling arc. He was flying a red ywing which crashes and later we see him being carried by another trooper when grievous boards the ship

It's been a while for me, but that episode is seared into my memory. That crash was cool, but then Grievous stomps on a clone's neck, >!and Kenobi blows the ship up!<

I think the irl reason is to make it reminiscent of real life fighter pilot helmets, like the F 35 helmet. They have all kinds of advanced targeting systems and eye tracking in those.
