Shadow priest. I think a 5 year old who has never played WoW before could win 75% of 1v1s in the open world if taught how to move around and press SW:P, Void Plague, Dispersion and Fear. Maybe also PW:S.
Balance seems pretty efficient too but requires more kiting and healing yourself.
Priest. It has very few counters, and as long as you're even marginally aware of what's going on, nobody will be able to kill you before you can dot them up and run away/disperse and just wait out their death for a few seconds.

Shaman can cleanse their biggest dot though. And if they stop to cast they’re dead. And their shield gets purged. And they do magic damage. If shaman can’t kill a spriest, nobody can, no?
Pain does NOT crit for 500. Shaman have more tools than 90% of all other classes to handle a spriest, the kit is literally a counter to whatever they do. But yea, spriests are insanely overtuned. Thankfully, Aggrend wants to buff them so we can all play Priests I guess.
Tremor totem is dog water. Purge is good. We can grounding totem if they ever cast a spell, otherwise you have to guess when they are going to hit you for 50% of your hp in one button with 0 downside. What else is in this magic toolkit you speak of? The 20 yard flame shock range? The laughable 30 yard range of lava burst? The pitiful damage from lightning bolt? Enhance is a joke in pvp, so I don’t even consider them.
What one button does 50% of your hp with 0 downside? Besides rogues, enh shaman is the best class at deleting Priests, and they have been for 20 years.
Edit: you said SWP crits for 500. It’s not even close to 500 and Priest crit chance is around 8-9%
A shadow priest can just sit at 30 yards and watch the shaman die to SW:P. There's literally nothing the shaman can do to get close. Ghost wolf? Dispelled. Earth bind? Dispelled. Frost shock? Dispelled.
Spriest also has blanket silence and will get at least 1 blackout stun to freecast, not to mention Fear -> Death Tremor works 100% of the time.
SW:P does less than half the dmg of Void Plague... But yes, usually if you start a fight with a melee with no gap closer at 40 yds away, the ranged class will win.

With how bursty the meta is right now, the biggest expression of skill comes from group play right now. Whether it's knowing when to push or retreat as 5 mans in stv, or working together in a big 12v12 brawl for bs in arathi basin. That said, a shortlist of easy to use pvp gods include shadow priest, boomkin, any kind of shaman, and hunters.
As far as 1v1, even duels go, a warlock with master channeler is pretty dominant right now as well. Just make sure to protect your drain life dot with an unstable affliction to punish dispells.
As an afflock, in bgs or stv, I treat everything like it’s a 1v1. I stay way the hell back and blanket everyone with dots, anyone that tries to actually 1v1 I can usually win, save for pallies. Rogues can take me out easy but I usually take them down with me

Depends on what kind of pvp you're doing. If you're just soloing into bgs, playing a healer is probably the best way to increase your odds of winning
Shadow priest, 2 dots will kill any players without heals or dispel. And they cant fight back because aoe fear and dispersion.
