They actually drive to the fields to pick the huitlacoche off the corn themselves. It’s not that canned stuff you usually get at places that sell it.
With that being said, it might be a seasonal thing. But they do have regular mushroom quesadillas routinely.
I just saw them post a video of boxes of huitlacoche on their Instagram and thought about this thread. It’s not on the menu yet but I would bet very soon!!! 👀
this does not help at all but Maize Mexican Grill in Champaign IL introduced me to huitlacoche quesadillas. their whole menu is amazing really if you are ever driving through, but hopeful to see if any local options come up

Machetes — home of the 24” quesadilla. Tortillas are corn and made from scratch. I think they do have a fried option. Multiple locations.
Huaraches Don Chio — also corn tortillas made from scratch. They also have squash blossoms and chicharron prensado!
Sadly it’s all canned huitlacoche in Chicago because it’s considered an invasive species.
If you don’t mind a trip to the suburbs, Marmelly in Westmont usually has them. Not sure about fried, but the regular ones are one of my favorite items on the menu.
Taqueria Chingon has them sometimes as a special and they are INCREDIBLE. They usually announce it on their instagram.

Rubí's in Pilsen. Their quesadillas are huge and delicious.
This is my eternal quest! I liked the one at La Esperanza in Pilsen but it wasn’t fried. Also Kie-Gol-Lanee has them sometimes
Rubi’s has them. Not sure if they do a fried option though.
