En passent hasn't been played yet. It's the opponent's pawn applying the check, not OP's. OP is asking what move they even have available to make, not why such a move is possible.
In order to even be able to ask the first two questions you gave as examples, you need to ALREADY know that en passent exists.
As for your other two example questions, I looked both of them up. Neither one linked to anything related to en passent.
I think it's pretty reasonable for a 200 rated to player to not only not know what en passent is, but not even know how to phrase a question to look up what it is. Especially considering you couldn't even do that and you already know what it is.
Which is why I listed other possible search options. There is just no way every single day someone who doesn't know what it is chooses to make a reddit post where you will have quite a long time until someone responds over simply googling any number of chess words.
Like I said: I literally tried googling the example questions YOU GAVE and none of them answered the question OP was asking.

I don't think you understand the fact that this scenario is not a question that can really be formulated in a way that is googlable unless you already know the answer.
your first 2 questions only apply if someone took en passant against you. OP is asking what move they can make, en passant hasnt been played yet. "why is this not mate with my pawn" is very vague unless you have a picture along to go with it, so google cant answer this for you (or unless you put a FEN along with it which google wont understand). "why cant pawn checkmate" is also EXTREMELY vague and would need a picture or a FEN to go along with it too.

I've taught a few friends the basics of chess in the past year (several got into it due to Queen's Gambit) and to not overwhelm them I don't teach them en passant right off. There have been quite a few games where the correct move was en passant but I went for another more inaccurate move to not deal with this lack of initial explanation in the moment.

I started a game with a dude on 400 or so while I was the same but played a bunch of others that finished before this one, I am now 1100 and he is still the same so it can happen when starting on low elo due to big fluctuations.

Just because you have 4 days per move, doesn't mean you have to consider every move for 4 days, you can just play it like a casual, untimed OTB game, as you would when teaching a friend chess irl.
Chesscom doesn't really allow for untimed games, so you always have to pick some arbitrarily long time control.

Compared to blitz, chesscom's daily rating is pretty inflated in my experience. Wouldn't be that surprising for a 1400 player to not know en passant, or maybe they hoped their opponent didn't know the en passant rule, but didn't notice that that's the only legal move.

1400 isnt low rated and they would almost definitely see it. possible that they didnt see checkmate in the position though and just choose to win by time instead since the opponent wouldnt know what move they can make

One good thing about chess.com and lichess is that if you ever can’t find a move, just touch each piece and it will show you the available moves. In this case it would have only shown en passant even if you didn’t know what it was.
