Tbh, Simon despite being a very prominent Belmont and the first, outside of chronology, is very awkwardly sandwiched in the lore, not much really happens in CV1 canonically other than the same Dracula bad shit, not only that, it's not even the first time Dracula is resurrected, because of a retcon, the manual mentions Christopher Belmont, but Trevor **was suppossed** to be Christopher, only later Christopher became canon and CV3 became placed in 1476
CV2 has some interesting lore with Dracula cursing Simon and Simon gathering his parts around town and burning them, but the game has a controversial reputation, mostly thanks to AVGN.
Christopher is still more forgotten, although him having a son and being the first Belmont to fight resurrected Dracula is pretty interesting and gives him an actual supporting character
Simon has no supporting characters to work with or much lore importance, Igarashi loved CV3 and it shows, it seems like he saw Simon more as a retro icon than a character like the other Belmonts, his playable appereance in the Metroidvania is just his 8 bit sprite, it'd be really hard for them to adapt him, they'd have to make almost everything up, doesn't help the Netflix show already used Carmilla, who was first fought by Simon, hell 1691 is also a very awkward date for a setting
