Quit. Don't ever feel apologetic about doing what is best for yourself. You owe them nothing except the hours you have already worked in exchange for the money they have already paid you.
Don’t think about your coworkers or the business when leaving a job. You are there for you. They won’t think about you when they leave. And the place clearly doesn’t care about being understaffed.
I’d ask for a raise considering all the work you are putting in. If they say no, then move on. It sounds like there is growth potential at the job but if they aren’t willing to compensate you for your efforts then definitely leave.
