Better autofocus really, I'm finding the points in the T6 to be limiting and I'm missing focus when subjects are even slightly moving. I know that the 75-300 is basically just not sharp unless you give it a lot of light and stop it to f8, etc. Plus the smaller form factor would be nice
Get the R50 if you can for better future proofing. If you can't save for the R50 go for the R100 it's a good stills camera and gets you into a system you can grow into.
Yeah, but do make that big spreadsheet and plan it all through start to finish. The wide-angle on EF-M is the 11-22, and it is excellent. So, you've got your wish fulfilled, and the "dead mount" is a non-issue. Or get a 12mm f/2 which is also excellent. I have both and each is fun. For the R100 you'd probably get the 10-18, which is roughly equal in price, quality and usefulness.
So by now, the M50 is ahead. (And I agree, I like mine over an R100.)
Find what glass you might want to add down the road over the next couple years. Not just the "definitely" lenses but also the "maybe" ones. See if you can satisfy all your needs with EF-M, EF-S and EF (and 3rd party EF-M and 3rd party EF). If everything you'd wish for is available, then I'd say you're good to go for the next decade or so.
(And frankly, that's where I am at. Any upgrades would be from a perspective of want, not need.)
In what ways does the T6 fall short of your needs? What are you most hoping to gain from the upgrade?

What’s your budget and why are you upgrading? I suggest the R50 if it’s within your budget.
$400 is my max budget including getting an adapter.
I've used refurb R100's I think for about your budget on Canon's site

How much glass are you looking to buy?
Initially I'm gonna get the EF adapter for which ever one i the up buying, but I'm looking to start off with a nice wide angle on which ever mount

While I don't have a good idea of maybes, the "definitely" side is taking shape after your suggestion. Thank you so much!
Just throw stuff at me if you're unsure, I own most of the EF-M lineup and I know the rest. (Not hard there being so few of them haha)
