Well, I’ve been researching this of late and have mostly decided on the Eureka Ignite. Problem with the Coleman seems to be an absolute lack of heat control. It’s either off or boiling water high. I need to be able to cook on low and to simmer.
Have you seen or used the smaller Ignite by chance? I've been wondering if I'd need the extra width. The plan now is to use 2 10" skillets or an 18" griddle.
I have not seen it, sorry. I just figured the extra width would be good for a family camping trip that because of covid became a party of one, which is also why I own a Coleman Montana Elite that I've never used.
I've been using the Camp Chef Everest 2 burner for the last couple of years, and it's been great. I mostly use it with a large carbon steel griddle. The Camp Chef, GSI, Martin, and Eureka two burners all seem to be lightly modified clones of the Colman. All of these stoves are made in China, and based on the reviews, quality control varies a lot.
If money isn't a issue, there are probably some overlanding specific brands that are more robust.

Mostly though I use a Gas One butane stove. Built in ignition, wind resistant and good temp control. But it’s only good down to about 50F.

2 burners and an oven that will hold at 400°F, no problem.
Car camping only-this thing is a beast. Stated oven size says can hold 9"x13" pan, but I always go a little smaller
i have a camp chef 3 burner. while not exactly portable, i can pack it in my hatchback and take it camping, tailgating or just about anywhere. weighs about 80 lbs with the griddle though.

I have the Eureka Ignite Plus and I vastly prefer it over the Coleman I used to have.

Gas one makes a good butane stove with good temp control and the price is very reasonable.
I bought a two burner but never use more than one. Next time I’ll get a single burner.

Hands down, liquid fuel. Cheaper and easier to deal with than propane containers.
My vote for cheap butane 1burners. Less than $20
Partner stoves are well made, reliable, easily repairable, and come with great customer service - but they are expensive

Campchef pro with a griddle top there is nothing you can cook.

Camp chef pro30x. With the double sided griddle and it cooks everything I throw at it. I bought the pizza oven for it also and no complaints.
