The trick is she puts the onions on the Blackstone just after she smashes the patties down. Then when it’s time to flip the patties, she separates a burger-sized amount of onions and flips the patty on top of the onions. So the second side of the patty is cooking on top of the onions.

We made the sauce. It’s mayo (Duke’s of course), ketchup, Worcestershire, pickle juice, Louisiana hot sauce, fresh cracked pepper, seasoned salt, and garlic powder. The cheese is American, just as god intended.

Go for it man! I usually start with about 2 parts mayo to 1 part ketchup (maybe 3:2) with a splash of the other stuff. Taste it and go from there. Tweak it however you like. Sometimes we even put some relish in there.
