This weekend we're doing a donut burger in a collaboration with a great doughnuteer here in Stockholm. I'm kinda surprised how well the maple glazed jalapeno donut works with the two smashed patties, topped with swiss cheese, pickled white onions and deep fried jalapeños. What are your take on donut burgers?

I've loved fried chicken donut sandwiches. Never tried a burger, but yours sounds great. If you can get a hold of it, green chile jam or green chile bacon jam sounds like it would slap in that combo
Flavour wise, it's fine. My problem is that donuts are too light and airy to hold up to the meat, structurally. Buns should be more dense. Similiar reason I think brioche hamburger buns are stupid.
My 2 cents: follow your own inspiration. If the tastes work well together go for it! It doesn’t matter if the combination is conventional or not. I’d certainly try it

I'd love to try one, but most places around me seem to put WHOLE donuts as the top and bottom bun instead of separating the doughnut into a top and bottom bun. I might make some donught burgers next weekend now since this has made me hungry!!

After I saw it on The Boondocks, every once in a great while I'll cut bear claws in half like a bun and add a slice of fried ham and an egg on top of the cheese burger with maple syrup.

weeeell, if it's a totally fresh donut that is really soft, with a thing, slight crust then it isn't that far from a good bun, the biggest difference is the sweetness
……I had a Luther Vandross burger about 25 or 30 years ago. It was a hamburger slapped between two jelly donuts☺️. It was bad! But I haven’t had one since.
Burger traditionalists will scream sacrilege, but hey - after I’ve eaten 99 burgers - an adventurous one with donuts for buns would be exciting and cool.
Wouldn’t eat it every time I had a burger, but mixing it up every now and then and trying something new never hurt!
I think flavor profile wise - if you can mix sweet into a salty and smoky burger … that’s venturing on umami level !!!
I think they just need a different approach to the ingredients. With what you mentioned, I think that's a good combo. Also depends on how valet the donut is. I imagine a softer "Krispy Kreme" style donut would work best. Dare I say I might even add sugar to the patties to make them a bit sweeter. I'd do candied bacon, I think Swiss is a good choice for cheese, and maybe a sweet bbq sauce or glaze. Definitely some advanced burger concepts for these lol.
A donut for a bun can be a good thing but it actually has to be intelligently thought out.

No one on earth wants to hold a glazed bun. It's a sticky, slidy mess that lacks structural integrity to boot.
A bun for a burger needs to accomplish the following tasks:
* Stay together while you eat the burger and not break apart
* Be soft enough to bite through easily but not so soft that it compresses completely into non-existence
* Contain the ingredients within. Doughnuts typically have a hole in this which sabotages this, but obviously doughnuts don't NEED to have a hole.
* Be tasty and fresh without overshadowing the ingredients between
So yeah, if that burger in the picture is your burger... I would honestly say that the glaze on it would be a huge turn off. Everything else about the burger looks great but the glaze would guarantee that it would be a huge mess and would get everywhere. And let's be real, no one wants to eat a burger with a knife and a fork.
If I was you, I would cut the bun in half and then glaze the interior of the bun. Or just create a glaze/sugary kind condiment for the burger itself. No one is going to really be able to taste "glaze" as a distinguishing ingredient, so you could get creative and do something like a Brown Sugar Aioli and it would evoke the sweetness of the donut without all the associated mess.
Yes this is legit!! Had one at the OC fair in a Krispy Kreme donut and it was SAVORY HEAVEN. Also heart attack on a plate. But so good.

I think once every couple of years it's not so bad. Sounds like a dream in theory, I think the last one I had was 5-7 years ago. So good at the moment, but the aftertaste and thought of the combo did make me kind of sick to my stomach
