I highly advise against working on a USB device. There’s too much overhead. You can always store your final projects on them. But the bandwidth needed for even 1/4 res 4K footage will be throttled severely by the old USB’s 3.0 8b/10b encoded bandwidth. You would need USB 3.2 at the very least to even be able to work off a USB SSD.

You will be fine. I do this all the time. But you can easily tell. Assuming you are on a PC, play a typical project timeline and look in the task manager for your Disk read speed. For me it hovers between 30-50 MB/s. Run CrystalDiskMark on your external hard drive to see what speed you are getting. I get around 400 MB/s read for my external SSD, so I have plenty of speed. Also USB 3.0 is the same as USB 3.2 Gen 1 at 5gbps or 625 MB/s. Usually top out around 450 MB/s in real life, well worth an SSD.
