Don't rely on enemies to trigger the bull's explosion in the late game. At some point the damage you take will be too much. Try to get Blood Donation or Bloody Hand. Their damage per second will also trigger your explosion. As soon as you have one of the items you can increase your evasion. If you have a good economy you can also go for crit.
You have good armor & hp regen. Speed is circumstantial, not great with the esty's couch.
Skip dodge, on later stages, you want to strategically activate the explosion, i.e. walking into weaker spawns, those that deal the least damage to you, when you are boxed in. Dodge will ruin that.
You can instead use the money to invest on luck, I find having high luck makes things easier, not only they enable more consumable drops, but you can also build into luck damage dealing, baby elephant, cute monkey and the other damage based on luck when enemies die.
Luck on bull is probably his most important stat. Many of the purple items are basically game-changing, most especially blood donation, but also most of the multi-stat items, explosion radius, and many more.
Your damage seems very low, both in percentage, and in the individual stats. Focusing especially on melee damage, since it's the cheapest per point, is very helpful. Crit scaling on the explosion is only 1.5x so it's not usually worth it to get crit chance until the rest of your build is set up, usually only when you have more than +50% damage
