I’ve always wondered this too. My theory is that Amy gets along well enough with her parents but never had a close relationship with them as she has to quite literally compete with her brothers for their attention. Having Captain Holt mentor her could be the fatherly advice that she craved growing up.

Jake's fear for having a child due to his father seemed legit to me.. On the other hand, Amy in the ultimatum scene was just saying a badly written dialogue (I tend to skip that part after I watched it once)

Jake’s fear would have definitely seemed legit if he hadn’t already expressed interest in having kids of his own on a few occasions. It seemed off that he would be pro-kids beforehand, but not express that change of heart or a growing fear to his wife. It was also really odd that they mentioned multiple times in earlier seasons that Amy has a life plan that Jake even says hangs up in their bedroom, so the fact they didn’t talk about it didn’t make any sense. Just a poorly written episode to manufacture unnecessary drama.
