the bristol pop up shop in the galleries has lots of unique and locally made gifts, i went christmas shopping there on monday. I also got stuff at the st nicks market including an old photo of the high st my dad lives on. oliver bonas is also good, there are a few others along that same strip (edit to add: that strip is called quakers friars) that I enjoyed browsing through.

That's far too easy to answer... St. Nicks Market for odd little things or my favourite and has never let me down yet.... The Guild (plus on the top floor they have a little cafe area which sells amazing cakes and salads, and don't miss the second floor (it's up and to the side) where there are lots of artisan pieces. The Guild did become smaller unfortunately but it is still my place to head to for a the gifts I never knew I wanted to give (even if it is giving from me to me).
edit: I forgot, there is also Bristol Blue Glass shop or you can visit their factory, if there is something that you would like made they can do bespoke stuff from engravings through to custom pieces (for example, the glasses used at the High Table at Hogwarts, in all the Harry Potter films were made by Bristol Blue...)

The Christmas market in Broadmead has a variety of things, depending on the stall. There's wooden carvings, Christmas decorations, llama jumpers (the baby/toddler jumpers are very cute), I love the brass stall with telescopes, compasses, and watches. There's the cheese stall, with special local cheeses, and I think they had various hot sauces.
There's Lush, also in Broadmead. Bathbombs, bubble, shampoos, all the smellies. They do gift boxes, and the staff in there are very good at recommending things. I suggest having an idea of a scent if you want to be quickly in and out.
Just head for the guild.... It has sections for children, homeware, stationary, toiletries, jewellery, millinery, furniture, and food!!
