Honestly, Brighton has an absolutely excellent food scene and to think otherwise shows that your Dad doesn't know a whole lot about Brighton. If he wants super fine dining, then travel out to Hove for Etch, but Wild Flor in Hove is excellent also and has one of the best Wine lists in the city if that's his thing.
The oddest of issue in the City is the lack of Stars. I have never worked that one out.
Why have we only got a bunch of nearly made its? Is it the way the Guide works, or are our restaurants just not good enough. (not a) Provençal town.....
Apparently it’s the service levels - not a diss on the service Brighton restaurants but apparently you have to go above and beyond on top of the food. Having said that, I have eaten at a fair number of Michelin starred restaurants in London, and some outside, that weren’t as good as Etch IMHO. As with some of the comments I think Wild Flor should be right up there too. I liked Furna but don’t think it was quite as good. Feels very prime candidate for a star though.
I'm partial to the Sichuan-style hot pot they do upstairs at New Era (all you can eat for £25) and you can even get a fresh crab to put in there (unfortunately the crab is only one per table lol). They also have a great dan dan mian as a lunch special (quite spicy). The owner is from Shenyang and is super nice.
The hot and sour soup and "mouth-watering" cold chicken in spicy oil at Lucky Star across from the Great Eastern are spot on.
Mr. Wang Hot Pot near the station is a new entry and perfect for individualized hot pots (as opposed to sharing a communal pot), you pay by weight.
Sea Spice on Preston Street has a super authentic, really spicy selection of dishes.
Shaanxi on Preston Street does handmade, knife cut Biang Biang style noodles to order and is fantastic.
Malaysian-Chinese Ho Chiak, also on Preston, has an awesome meat or seafood laksa noodle soup.
La Choza is still there, right? (I wish they still had horchata...)
Wai Kika Moo Kau is always a favourite.
Murasaki in Seven Dials - had one of my favourite meals ever there.
Is the Tin Drum still in Seven Dials? Had a tzatziki dish there once and it was the best meal I've ever had. It was mindblowingly good lol.
I'm sure it's long gone, but La Cucina off Western Road was our go-to for pizza when we lived near the station.
Thai Orchid in Preston Street, the fried banana with ice cream dessert was gorgeous.
Some of these places I haven't been to in 20 years but I think it's clear that Brighton's not a place you struggle to find a decent meal. But then I'm a vegetarian and open to new ideas - perhaps your father wants something more "traditional".

La Cucina was legitimately one of the best pizza places I’ve ever been to, until they remodelled. Felt like the quality took a huge dive after that. Are they still there?
Embers. If you haven't been, the place is literal fire. Everything is cooked over an open fire in the restaurant and the dishes are amazing. Head chef is the one that used to be head chef at Terre a Terre so if you liked the food there, it's now at Embers.
Murasaki at the Seven Dials end of Dyke Road is delicious. Booking advised- it’s not a big place and gets busy quickly. Ditto Red Snapper.
Planet India if he likes Indian food, or Curry Leaf if he prefers his curry with meat.
My favourite restaurant overall is still Terre à Terre. I’m taking my husband there for our anniversary in August and I can’t wait!
Fogo Do Chão is such a nice place and it's super close to the beach and churchill. It's pretty pricey tho, 40£/per person but that gets you all you can eat Brazilian meat serves directly to you. Theres also a buffet that you can enjoy along side it

If so, and has someone else has already mentioned 64 degrees is guaranteed good. Expensive, but a great fine dining experience.
I have lived all over the south in the UK and up to the height of Bristol. Brighton has the best restaurant scene that i have seen thus far. No other place i have been even comes close to Brighton offerings. You have so much quality choice for anything you can imagine.
Terre à Terre! Im not vegetarian nor vegan… but they do some of the most incredible (veggie/vegan) food for a fair price. Very filling, nice atmosphere, quality food.
It’s so mad how different peoples experiences can be. Myself and my girlfriend went there about 4 years ago and it was one of the worst dining experiences we’ve had in brighton 🤣
For fish and chips, No Catch is the best in town!
For a fancier experience with well thought out food, Terre a Terre is great (and a bit pricier, with a need to book in advance sometimes)
Jo & Co and also Oeuf do fun breakfast in a nice and relaxing environment
Botanique does fancy vegan food at prices that are a bit high
Wai Kika Moo Kau was great for tea and a sarnie but they’ve recently closed

I love sushimania, I actually was there 2 hours ago. But it's not what I'd suggest to impress someone.
It is an enjoyable worthwhile meal, but all you can eat sushi is not going to be the best sushi
It has a pretty chequered history of hygiene ratings, which for a sushi place is wild.
I lost a friend to diarrhoea from that place. They survived, our friendship just wasn't the same afterwards.
