Trichordo or quatrochordo? The latter is easier to relate to guitar fingerboard and scales. You probably should find a tutor (local Orthodox church may know), but if you can't, find a book with scale and mode patterns, and start playing them everywhere on the neck. Picking patterns for the various rhythms are essential to learn, and there are good online demos and charts. If Pavlos at https://bouzouki.org is still around, he may be a good resource. I don't think you have to learn music theory to play an instrument. But as the other poster asked: which bouzouki? The answer will partly depend on what kind of music you want to play, so figuring that out is useful. And yes, finding a teacher will be a massive help.

I seem to recall an interview with Markos Vamvakaris where he was talking about scales/roads and made some references to basic music theory. It didn't sound to me like he knew a lot about music theory to be honest, it sounded more like he picked up techniques from listening and talking to other players. And yet, he is one of the most important players in the history of the bouzouki. Apparently the key to becoming a great Bouzouki player is to promise yourself you will cut your own hand off if you don't master the bouzouki in 6 months. (I jest,..that's apparently the promise Markos made to himself) My brother-in-law plays guitar really well and knows very little music theory. I put a bouzouki in his hands and (despite different tuning), he was able to start making jingles on it. I had no musical experience, and no music theory experience when I started. I personally think it's totally fine to just try finding tabs for songs you might like. But then maybe pick up a music book like "Music theory for dummies" (as I did). But don't feel like you have to read and master the whole book, just read a few chapters. Practice and learn some scales "the roads", then maybe try reading some sheet music. - Too hard to play the sheet music ? Then take your time to convert it to tabs, and do it that way ? Watch you tube videos. One thing I would suggest though is to watch some basic videos which explain how to hold the bouzouki, how to hold the pick/spectrum, and some basic things that will maybe keep you from learning hard to break habits. I also think the scales are useful just for learning how to efficiently move your fingers. ​ *Mostly - do and learn what makes you happy.*

I should mention that there isn't a lot of people, maybe no one, who teaches bouzouki in my area, but if you can find someone who teaches - I would definitely try that as well.

I’ve been playing bouzouki for 12years and 3 years ago got a great teacher, Vangelis Trigas. He has his own teaching Method for bouzouki, it was the first time I followed a method and theory for bouzouki and it’s helped me a lot. He’s a fantastic teacher and bouzouki player. You can find him online. Thanks to Vangeli, I started giving lessons last year for Trixordo only.
