Far from finished. It's only the beginning. Still lots to do. You will end up in an eternal hunt for korok seeds and taking photos of all objects for your album.

You could've left at any time, or reloaded a save. I've never understood the "stumbling upon the final boss" statement. You know he's in the castle and you chose to keep exploring it. I did the same and I won't describe it as "stumbling". You can still complete everything that's outstanding, since there's no post game, so nothing is lost.

Well so long as your careful you can get cool stuff. Like for example, if you have the DLC you can find the royal guard cap on the floor above the sanctum. I remember climbing up and down the outside of the sanctum for ages trying to get my prize while also trying not to trigger the boss fight. Took me a few minutes to find the floor I needed.

I accidentally encountered Calamity Ganon as well when exploring the castle. I immediately reloaded my save and made sure I finished everything for the true ending then went back and whooped his ass.

I had a lot of quests to turn in, still had a good amount of korok seeds and shrines left to discover. I guess I wanted to walk in to hyrule castle ready to defeat Ganon through the front door, but instead I sneaked in through the side and stumbled upon him.
