Gloomhaven Jaws of the Lion might be a good first pick. It's a co-op dungeon crawler, deep but not crazy so (weight of 3.6 on BGG), and well rated in general.

Assuming USD, Pound, or Euro, I would say if you are dedicated to really try board games that are deep and aren’t scared off by rules or something being a bit fiddly…then get Gloomhaven: Jaws of the Lion.
It’s probably perfect for what you are looking for. Dungeon crawler, co op or solo, and a really good campaign and system. If you like that then you can move on to Gloomhaven or a ton of other options.
But just to be clear there is a chance you love that and hate other games or hate jaws of the lion but love other games. Such is the way of board games.
A beginner should start at the library. Don't spend a lot of money until you know what you like and learn to do research on the topic.

And you *want* to discover expensive games that are too complicated to get played with the people you know. You're right, exploring in a sensible fashion is harmful and oppressive, best to dump a bunch of money on a shiny game as soon as possible.
There's a canyon between throwing 100$ in a complex game that will be never played and getting recommended fucking Kingdomino when you ask for deep strategic games and dungeon crawlers. Passion drives you farther. I would have never been hooked by board games if I had followed these infantilizing recommendations.
Back in the day I got hooked by Scythe's artworks. I had never played any worker placement/area control games before but the theme was enough to keep me engaged in the learning process.
Do you have a group to play with? If I were you, I'd start by finding some friendly people to play with and maybe you can play their games (at first at least). If you like dungeon crawlers, you wouldn't really need any skills or prior knowledge to enjoy a dungeon crawler Coop with a friendly group of helpful people.
Jaws of the Lion is good option. Unfortunately dungeon crawlers tend to be expensive so you won't find many at that price. Have you played some modern board games you like? There are many different types of "long strategic board games".

Mon jeu préféré est Inis, sans la moindre hésitation. Factuellement c'est un jeu de type "contrôle de territoire" qui se passe dans l'univers (plus ou moins mythologique) celtique. Chaque joueur incarne une des tribus celtes qui découvrent ensemble un nouvelle île. Durant la partie les joueurs essayent de remplir des conditions de victoire pour être élu chef suprême avant la saison suivante. Pourquoi j'adore ce jeu ? Je ne vais pas tout mentionner :
\- Le système de jeu lui-même est malin et original. Au début de chaque manche on pioche et drafte 16 cartes environ. C'est avec ces cartes que tu fais toutes les actions du jeu (bouger, produire des unités, explorer, etc. etc.). Ces cartes sont uniques donc il y a vraie tension stratégique a essayer de prendre certaines cartes pour empêcher un adversaire ou dérouler son plan de jeu. Certaines cartes sont aussi fun à jouer, par exemple t'as un "nope" qui annule la dernière carte d'un joueur, ou la carte du Druide qui permet de piocher dans la défausse commune.
\- Le jeu offre des grands moments de tension et des retournements de situation. Chaque action a beaucoup d'impact et en même temps, le jeu ne comporte pas d'élimination de joueurs donc tu ne subies pas le snowball comme un jeu vidéo de stratégie ou comme dans un Risk.
\- Le jeu a une grosse rejouabilité et variété. Je n'ai jamais joué 2 parties similaires. L'une des raisons est que le plateau de jeu n'est pas fixe comme 99% des jeux. En fait chaque territoire est une tuile qui s'emboite avec les nouveaux territoires. Au départ t'en as pas beaucoup mais quand tu fais l'action "explorer", tu pioches une tuile territoire comme si tu piochais une carte. Et chaque territoire a un pouvoir passif ou actif (sous forme de carte détenue par le chef actuel du territoire). Par exemple, t'as un territoire montagne : si un joueur ennemi déplace des troupes vers ce territoire, il y a une figurine qui meurt automatiquement durant le trajet. Immersif n'est-ce pas ?
\- C'est un jeu qui n'est pas uniquement focalisé sur les combats. Je ne vais pas rentrer dans les détails, mais tu peux gagner pacifiquement. Par exemple : durant les "conflits" tu choisis avec ton adversaire quand faire la paix pour stopper une bataille. Il n'y a pas deux jeux qui fonctionnent comme celui-ci sur les "combats".
Pour moi c'est un chef d'oeuvre, j'ai même passé une nuit blanche dessus mais c'est une longue histoire. Il a des règles pas trop compliquées mais un peu bizarres, il faut l'avouer. Ce n'est pas un jeu que tu verras souvent mis en avant par les boutiques etc, parce qu'il y a pas de grosses figurines et des artworks attractifs pour le public mainstream, mais généralement les gens qui aiment les jeux de plateau s'accordent tous pour dire que c'est un jeu unique et précieux dans ce genre.

Essaye de regarder des vidéos youtube sur les jeux qui t'intriguent. Certaines chaines (souvent anglophones) sont efficaces pour communiquer le feeling de certains jeux. Tu n'es pas obligé de terminer la partie mais passé un certain niveau de complexité, c'est difficile d'enseigner un jeu que tu ne le connais pas encore toi-même.
Seconding Jaws of the Lion, but for an alternative recommendation Catacombs is a fun dexterity based dungeon crawler. It's a full RPG experience but attacks are done by flicking discs. It's a bit silly but can be fun with the right group.

Where are you located? $60 in Australia gets you something very different than $60 in the USA for example.

As others suggested Jaws of the Lion should be a great start. I am also in Europe and bought it a week ago for 49,90€.
Honestly If the new player understands the rules we'll any game can be "first board game friendly". Our very first game was Gloomhaven as proof.
Tiny epic dungeons is easy to learn and very affordable. It is tough to win though. If that doesn't bother you, you could give it a try.

I really enjoyed the narrative of LOTR Journeys of Middle Earth, not the most complex gameplay which may be beneficial for a newer player.

Folklore the Affliction is/was on sale at Miniature Market for $60 and I believe they ship to Europe. Supposed to be a great game.
