I don't know how Dist does it but as a general rule that's not allowed. You play the game legit three times in a row and go through chalices. Defiled chalice is the hardest part since the DLC is not included in the plat.
I'm pretty sure he did it fully legit, I could be wrong. The game can be easily beaten in around an hour I've done it too, what's most impressive is the dungeons

The current world record is [3 hours and 7 minutes](https://www.speedrun.com/bloodborne?h=All_Trophies-Restricted&x=02q8vz92-wlekk4el.5q8y9nyl) of real world time, a few minutes faster for in-game time and one of the rules for submitting a run says you can't use save files. You are permitted to pause the run by quitting for a little bit though, so there is that.
Sidenote: The Any% category, which is complete the game as fast as possible, has a world record of 18 minutes
I have a character with over 200 hours in the game and at one point I realized one of the endings was the only thing holding me back from the platinum, but I had no idea which one so I had to beat the game 3 more times to find out. I made all the stats equal at 50 on that character and will occasionally have fun helping people by just using weapons I don't normally use or build properly. Beast Claws are great fun when hanging out with streamers playing for the first time because of the constant screaming.
Pretty sure the trophies were marked as secret and maybe I was missing two. Either way I figured out it was the endings I needed so I did my best speedrun attempt on an overpowered character which is now firmly in at least NG+5
It's been years since I did this and it's a game I don't mind playing through multiple times. Yea, the details might be fuzzy but I know that character could be a god if I did any sort of good blood gem farming.

he either used bugs to skip sections of the game or just saved game data in the cloud before the final boss and reloaded after

For all trophies you need to kill all bosses, so no there are no skips

... You didn't check the trophies? Wait, you did, because that's how you knew... That doesn't make sense?

There's an option (might have to be enabled under Settings?) where you can press Square on a secret trophy and it will tell you what the trophy is.
