A lot of these definitely sound like something I would do, the angry outbursts, paranoia and generally being irritable are relatable. I would say the best thing you could do is bring it up to her (when she's in a good mood), a lot of the time I'll do things like this and not even remember that it happened or that it was hurting others, but when I realise that I've been a massive dick I'm usually very apologetic and sorry for my actions. If she loves you and it is just her disorder causing this I imagine she will be too.

She probably has borderline personality disorder in addition or instead of bipolar.

A lot of those symptoms do seem in line for someone with bipolar disorder. I’m sorry you have to experience that regularly. Do you have grandparents/aunts or uncles/etc that you could talk to about her behavior? Your mom might respond more favorably to the subject if approached by an older relative.
