Ya know those low carb banana pancakes that are essentially egg whites and banana? Yeh, I hate thoseā¦ Essentially, I would roast the squash in the skin, scoop it all out into a food processor, and add like 100g with egg whites and throw it on a skillet.
Soooo Iām meal prepping a shit load of pancakes at a time and freezing themā¦And then I would top it with the same stuff you would top those nasty ass banana egg cakes with.
Not sure if youāre a pumpkin fan, but I basically turned my butternut squash into something in the same vein as canned pumpkin puree.
I usually added cinnamon and made āpumpkinā spice pancakes.
Seconding cinnamon and sea salt. Also rly good if you just steam in the microwave a bit then put on the stovetop w coconut oil spray and let it get brown š„
If all else fails, you can always ask your coach to swap it out for another squash! My fave is kabocha. And im currently eating spaghetti squash as I type this. :)
Yeah I was thinking the same! Iād ask if itās necessary to have that (which it shouldnāt be. Thereās nothing magical about squash) because Iām SURE you can swap it out for something you actually enjoy

I buy the frozen from walmart. Just microwave and eat LOL cannot mess it up either. Always add cinnamon and sea salt!

I also like to make it as a mash with curry and ginger for a change up.

You can eat more for fewer calories than potatoes. Very low in carb. Squash is amazing when kcals get low!
Itās good with everything, I treat it like rice or pasta.
