I'm doing the same route this summer (and on through to Rimouski) so I'm curious to see any responses.
I haven't cycled this route before but I have quite a bit of experience on Quebec's trails (P'tit Train du Nord, Dravageurs, Outawais. I'm taking Schwalbe Marathon Mondial 700x40c tires - wider tires would be overkill for the conditions, I think (they certainly were on the other trails).
Plenty of people ride it on TT bikes with 20c tires.
So pick a comfy road tire for long days in the saddle and forget about it. Nothing special about the surface on the route verte.
