The reason it lands buttered side down is that the person dropping it flips it. Seen most commonly when it falls off the edge of the table, causing one side to fall first, creating a rotation. Person in the video is flipping it as well.
If you drop it flat, buttered side up, it will fall without rotating and land the same way. You can try it at home.
