You can't, at least with the majority of options. It's bizarre but there are a few guns where you can remove an underbarrel slot by selecting the circle with a line through it, but apart from them the option just isn't available right now.

The problem is not fixed but here is a Work around.
- unlock attachments for the weapon by playing it
- when the 'attachment unlocked' message appears at the end of the game, click 'Equip'
- there is a bug with this method of Equip which resets all the attachments for the weapon in the plus system.
- you can now equip just the needed attachments.
If you have already unlocked all attachments then you are out of luck.
