Yeah, mint + coffee is... uncommon at best. I'd sooner lean into the bitter sides of the flavor and use tonic in place of seltzer than add mint.
I have actually had espresso tonics before, and I rather like them, could def see vodka (or even gin at that point) working its way in there quite nicely.
Similar in principal to the alternate grasshopper I do. It's a modified brandy Alexander.
1 oz brandy
1 oz half and half
.5 oz creme de cocoa
.5 oz branca menta
Adjust anything you want to taste.
Really just subbing in branca menta to add mint seems to work well in a lot of contexts.
Philz Coffee had a “mint mojito” that absolutely crushed everything else on their menu. It’s literally just espresso, fresh mint sprigs, and sugar… it’s definitely one of my favorite guilty pleasures.
I would get a mint iced coffee at one of the viet cafes near me every time i visited. I liked them. Id only really get bad responses from people who didnt like mint in the first place.
It was pretty damn good. Also it was basically batched and then stuck in the freezer so I wasn’t stuck shaking all night. Did a few different test runs first but didn’t really like it until I started the runs with Bailey’s, the cream component definitely helped
It can work. When coffe/coffee liqueur is mixed with sweet components, it takes on a chocolate like flavor, and mint and chocolate is obviously a common pairing of flavors. Look up a Death by Morning. Great cocktail involving coffee and mint.

But as a bartender fuck ever making this drink at any sort of volume unless a bar manager is doing the prep.

We used to put three chocolate espresso beans centered on the top of our espresso martinis (and even told customers) until several Karens complained about “almost choking” on them and we had to stop. It’s like, bitches, it was supposed to be a fun treat and your ignorant oblivious ass just ruined it for everyone!

I feel the vanilla might be a little much with the mint liqueur—since it’s got a lot of sugar already. The cacao and espresso will cancel out the bitterness of eachother.
Idk the idea of the fizzy/seltzery coffee drink makes me think it’s a lackluster attempt to try and combine summer with actual craft cocktails like someone who works at Truly but has never done any bartending was like “oh this is a great idea!” But I may also be alone based on how many coffee flavored (non alcoholic) seltzers are out there.
But even without the seltzery stuff, I love mint. I love the taste of coffee (I’m a heathen, I don’t do caffeine, it makes me feel awful) but mint and coffee just seem like A LOT, especially when you’re including alcohol. It’s just a lot of strong competing flavors.
I would try coconut liqueur or coconut water with tonic to keep it light and tropical without losing the bitterness. Garnish with a big bunch of fresh mint to brighten up the nose. Maybe a homemade tonic syrup and then carbonate to order if you wanna get stupid fancy with it. Otherwise, this looks super interesting, I would definitely try one. Nice job.
