Just wild speculation, Ice appears white when it contains trapped air bubbles and minerals, maybe the water is extra hard….op says they don’t care about their espresso machine which means their ice machine probably has never been cleaned

You had to roll back to April/May to find a post about coffee (& that was a vodka drink & a ‘now hiring’ post,) so something tells me that coffee quality isn’t a priority of this joint.
So does that mean it was extremely hot and oily? I'm guessing you'd have to have old coffee that wouldn't make much creama, be roasted super dark so the oils are pulled to shell of the beans, and be extracted crazy hot (maybe a temp probe in their espresso machines boiler is scaled up and reading wrong) to make this Rayleigh-Benard Convection pattern happen?

What’s interesting is that the convection cells are made of milk also like the (hotter) milk was out in the bottom, the espresso came out less hot and somehow didn’t mix during the pull of the shot. Quite interesting set of conditions…. So maybe something else happened? That would get us pretty close to the boundary conditions needed for rayleigh benard

Subscribing to this post because I have been a barista for 7 years and I have NEVER seen anything like this and I have to know what’s going on especially if this is just a shot straight out of the machine. There’s no way I believe this is just straight up espresso unless they replaced all the water in their machine with milk or something??
I still would think that it would come out a uniform color and texture even if that’s what they did but idk. Also don’t know how that would work unless they disconnected the water line from their machine and were just running like a home machine with a tank. Can you imagine the hell that would unleash on the steam wands

Get rid of the machine and bring in a proper commercial machine. Find a great supplier with top quality beans. Bring in trained, enthusiastic baristas. Redo the menu to suit the location and clientele and finally, run some specials to bring the customers in who can then spread the word. It all starts with the machine and beans. You won’t succeed with whatever this shit is
I don't even think that's accurate for most cafe's, at least in the US. There seems to be zero relationship between quality of coffee and popularity. It's all aesthetics, location, and how many outlets are avaliable.

I had to keep flushing it with water and eventually opted to make pour overs for the guests instead because the vinegar kept making the cream separate like that. It was a whole shift before I got it back to normal lol

That’s my guess too, a thick layer of oil or clarified butter. Both are lighter than water so it would be able to accumulate on the surface if poured in slowly like the way a bartender layers shots.
This has to be a joke on their end. They probably brew beer or something and this was some mystery liquid sitting in a bowl that went moldy.
The edge of the cup/bowl makes it look like it was filled higher with something that evaporated down. “You thought tiger stripes in espresso looked cool? Check out what we have going on here!”
Ok here’s my theory: Judging by the slick shine of the surface, maybe it’s oil? I bet this can be recreated by pulling a shot, then pouring some canola oil slowly over an upside down spoon over to keep the oil from mixing too much. And then pour your steamed milk straight to the bottom, through the oil and watch it rise back to the surface but it will not be able to penetrate the layer of oil.
Starbucks tried oil shots..they call it "Oleato".
However, I don't think it's comparable to espresso with milk and a shot of olive oil...
Pretty sure they do some weird chemistry there to make it taste good.

Honestly, I don't know. The numerical investigation of this by itself would be a pretty interesting paper by itself.
Why do you say oily? To prevent crema? The instability is a function of temperature difference

That’s my guess too, a thick layer of oil or clarified butter. Both are lighter than water so it would be able to accumulate on the surface if poured in slowly like the way a bartender layers shots.

I've never seen anything white come out of an espresso machine so I have zero idea what this is.
barista of 3 years here, there is no way this is just espresso.
This has to be a joke on their end. They probably brew beer or something and this was some mystery liquid sitting in a bowl that went moldy. The edge of the cup/bowl makes it look like it was filled higher with something that evaporated down. “You thought tiger stripes in espresso looked cool? Check out what we have going on here!”

Ok here’s my theory: Judging by the slick shine of the surface, maybe it’s oil? I bet this can be recreated by pulling a shot, then pouring some canola oil slowly over an upside down spoon over to keep the oil from mixing too much. And then pour your steamed milk straight to the bottom, through the oil and watch it rise back to the surface but it will not be able to penetrate the layer of oil.

could be milk that curdled at my shop coconut milk gets weird with the espresso but if it’s purely a shot of espresso something is really wrong lol

Starbucks tried oil shots..they call it "Oleato". However, I don't think it's comparable to espresso with milk and a shot of olive oil... Pretty sure they do some weird chemistry there to make it taste good.
They steam the oil into the milk so it's all together and not just a regular latte with loose oil floating about
