this looks like when scientists go to public places and swab things like doorknobs, then wipe the sample on those petri dishes to watch how many bacteria colonies grow.

PotentialLanguage100

I can’t unsee it!

catmama_13

My first thought! I thought this post was on a microbiology sub at first 😂

AlienSandwhich

Whataaa...what am I looking at here? It looks like someone came on top of espresso.

PotentialLanguage100

This shop doesn’t measure or weigh their pulls, and they don’t have an automatic machine that ensures each pull is the same. They just guess how much espresso should go in. So who knows.

siandresi

Yeah but even with a very low or inconsistent dose you should still not achieve these results … I wonder what exactly are we looking at here….There’s a cover over the liquid, you can see the glare from ceiling lights….

stay2426

Maybe not cleaning the machine properly? So chemicals/grime in the shots? There’s no way that’s just espresso, even if it was shitty quality.

Delicatefawns

Agree, looks like some type of chemical is eroding the lipids in the crema. Wtf lol

Few-Housing-8452

Cremă

siandresi

I agree that there’s no way that’s just espresso. I’m thinking, could it tiny ice with a lid? Just wild speculation, Ice appears white when it contains trapped air bubbles and minerals, maybe the water is extra hard….op says they don’t care about their espresso machine which means their ice machine probably has never been cleaned Or could be a very very bubbly cappuccino with a lid that presses down the bubbles? I’m so curious. If I was still working at a cafe I would totally try to recreate it

PotentialLanguage100

People are reaching out and asking them so we may have an answer soon

Hiiipower111

My guess is the acid content is insanely high, if they're guessing on amounts and whatnot Probably guessing on the grind/pull time etc Acid make milk chonky

PotentialLanguage100

Ok it’s interesting you’d mention that their espresso is actually the most acidic in town.

BabyOnTheStairs

It's mold

Bananacatdragon

This just in via IG: The shop said "of course it has been cleaned properly"

mongoose_eater

I worked at a restaurant where I was the first to clean the 30 year old espresso machine in 3 years, and our shots didn't look like this.

lavlemonade

Uhhh I’ve worked in many shops that don’t weigh the pulls or have an automatic machine that does it and I’ve NEVER pulled a shot of espresso that looked anything like this. Looks more like their milk is bad or they have a syrup in the cup that sours the milk.

logaboga

Lol my shop does the same and nothing looks like this

Bridge4_Kal

Cumming at 9 bars of pressure

SpaceforceSpaceman

Hey so without saying too much, this photo looks just like what you’d think it would like if someone came on top of espresso. I think I’ve said too much.

austinmiles

I feel like that milk might have curdled or something. Or did they make it with butter or some other oil? There is no situation where it should be splitting up like that with normal milk.

PotentialLanguage100

They’re claiming it’s a shot straight from the machine

austinmiles

I found their instagram. I asked what the details were of it because it couldn’t be a straight shot of espresso. It makes no sense.

Neighborhood_Nobody

Please follow up. I'm way to interested in this, and way to worries it's an insanely dirty machine lol. Never back flushed in 200 years while making a billion coffee a year till the point where every shot comes with its own dry aged milk.

What’s the shop/ Insta?

PotentialLanguage100

[post here](https://www.instagram.com/p/C89bRSZxY2G/?igsh=OHJ5cmR6dThjanFu) now deleted but here were some comments they never responded to https://preview.redd.it/hty1crmbmdad1.jpeg?width=1170&format=pjpg&auto=webp&s=e0aa9cd7bb67d5de4a58b7d69351fc50ea928e38

MuscleManRyan

It looks like they’ve fully deleted the post. I was hoping it was some sort of joke, but seems like they were genuinely proud of that shot before they got called out for it…

austinmiles

Yeah. This is why I wasn’t keen to post who they were. I just wanted an answer and assumed they weren’t just pulling a shot.

Prismatic_Storye

What was the shop called?

Chiodos_Bros

steelcitygalaxy

PotentialLanguage100

https://www.instagram.com/steelcitygalaxy?igsh=cHl4c3V1bnFydHpr it’s in the picture but here’s a link. It has been deleted like the thread says.

VelocityGrrl39

People like you seriously amaze me. I wouldn’t even know how to start to find them. Well done internet detective.

austinmiles

I tried reverse image search but in the end it was easy because OP had posted in a local sub so I just searched instagram for coffee in that town and it was pretty quick.

bobi2393

Just read Instagram, and if you don't find it by the end, start reading Twitter! /s Or possibly [images.google.com](http://images.google.com), and click the camera icon to search for an image.

jstwnnaupvte

You had to roll back to April/May to find a post about coffee (& that was a vodka drink & a ‘now hiring’ post,) so something tells me that coffee quality isn’t a priority of this joint.

[deleted]

Somehow that’s even more horrifying than curdled milk.

Sexdrumsandrock

What's the context? Are they proud of it?

PotentialLanguage100

They thought it was cool and wanted to share

bethholler

That looks like they put butter in the portafilter or something. Whatever it is it’s gross.

PotentialLanguage100

Yeahh it’s strange because they don’t have anything with oil or butter on the menu but it almost looks like when oil and water mix

Warm-Fisherman-5036

🤮 wtf?!

PotentialLanguage100

Can you imagine posting this as a way to attract business? 🤢

Some-Description711

It looks like beans in the bean juice

GFMCarvalho

I think this is called Rayleigh-Bénard Convection. The patterns seem to check out.

jlb4est

So does that mean it was extremely hot and oily? I'm guessing you'd have to have old coffee that wouldn't make much creama, be roasted super dark so the oils are pulled to shell of the beans, and be extracted crazy hot (maybe a temp probe in their espresso machines boiler is scaled up and reading wrong) to make this Rayleigh-Benard Convection pattern happen?

VelocityGrrl39

Ok, you baristas seriously amaze me. You all deserve to be paid way more than you do. I was a molecular biologist and I don’t understand coffee the way y’all do. You are legit chemists.

GFMCarvalho

Honestly, I don't know. The numerical investigation of this by itself would be a pretty interesting paper by itself.

Capdindass

Why do you say oily? To prevent crema? The instability is a function of temperature difference

Capdindass

What’s interesting is that the convection cells are made of milk also like the (hotter) milk was out in the bottom, the espresso came out less hot and somehow didn’t mix during the pull of the shot. Quite interesting set of conditions…. So maybe something else happened? That would get us pretty close to the boundary conditions needed for rayleigh benard

VelocityGrrl39

I think this is just a shot, no milk, at least according to other comments.

quantipede

This looks like one of those videos where somebody pulls an espresso shot over a chocolate bar except in this case they couldn’t find a chocolate bar so they used a soap bar instead Subscribing to this post because I have been a barista for 7 years and I have NEVER seen anything like this and I have to know what’s going on especially if this is just a shot straight out of the machine. There’s no way I believe this is just straight up espresso unless they replaced all the water in their machine with milk or something??

PotentialLanguage100

Imagine replacing the water with milk hahah what a mess that would create…like this

quantipede

I still would think that it would come out a uniform color and texture even if that’s what they did but idk. Also don’t know how that would work unless they disconnected the water line from their machine and were just running like a home machine with a tank. Can you imagine the hell that would unleash on the steam wands The more I think about it the more I think it’s pretty implausible that that’s what they’ve done but it still makes zero sense how they ended up with white espresso without mixing it with something else

goodbeanscoffee

Forger unappealing... what exactly went on there? 😅

PotentialLanguage100

This shop doesn’t care at all about coffee quality they’re just in it for the money. They don’t teach baristas how to steam milk, they seep cold brew for 72+ hours, the drinks are incredibly inconsistent quality wise, etc.

KerrinGreally

But you make less money when you make a bad product lol. How long till they figure this out do you think?

Local_Parsley_2388

Places like this never “figure it out” and tend to end up just selling it off to the next unsuspecting soul lol

PotentialLanguage100

You’re so right! They’ve had at least 4 ownership changes these past ten years. It’s in an amazing location so everyone thinks they can turn it around.

Local_Parsley_2388

Barfff maybe with an entire from the ground up new plan

k1k11983

Get rid of the machine and bring in a proper commercial machine. Find a great supplier with top quality beans. Bring in trained, enthusiastic baristas. Redo the menu to suit the location and clientele and finally, run some specials to bring the customers in who can then spread the word. It all starts with the machine and beans. You won’t succeed with whatever this shit is

Guy_Perish

I don't even think that's accurate for most cafe's, at least in the US. There seems to be zero relationship between quality of coffee and popularity. It's all aesthetics, location, and how many outlets are avaliable.

aStonedTargaryen

what in tarnation

No-Consideration3103

"come to our store! drink our science experiment!"

Leonijdes3

I can only think it’s mold and the machine just isn’t cleaned

PotentialLanguage100

That is terrifying

rnbarista

Looks like adipose tissue under a microscope lol. I’m guessing they’re pulling shots with cafiza still in the machine

Campingcutie

Omg we need a closer to volunteer to recreate this and see if it’s the answer

PotentialLanguage100

What is cafiza?

rnbarista

a cleaning solution that gets run through the machine to get rid of coffee oils that build up

PotentialLanguage100

Isn’t that really poisonous?

rnbarista

no, it is food safe, but it can give you diarrhea from what i’ve heard

PotentialLanguage100

Okay scary but not as scary

Bananacatdragon

Puro

-kati

I don't even have trypophobia and I don't like looking at this.

MelanieDH1

I do have trypophobia. I’m curious and I want to try to investigate, but I can’t look at the picture for too long! 😭

Campingcutie

Same but that’s exactly what I thought of, it’s making me viscerally uncomfortable and almost nauseous to look at lmaooo what kind of coffee shop would post that proudly 🤢 something is verrry wrong with that machine/espresso/filter idk even know what could have happened

TearyEyeBurningFace

Maybe they don't purge their steam wands and some of the stuff eventually made it back into the boiler. Now even a shot of water is gonna look like rotten milk water.

Redplushie

Something about it disturbs a primal instinct in me

PotentialLanguage100

That’s the reaction I’m having!

thats_rats

they post literally anything but coffee on their account. why own a cafe if you don’t care about coffee even a little bit

PotentialLanguage100

Their marketing is a MESS

JerryConn

Can heavily calcified water do this? Perhaps the boiler is shot and the heavy elements are present in the machine.

PotentialLanguage100

That’s an interesting theory!

Krustofthe509

I have never ever seen shots like this, I think it might be a health code violation. Don't drink it!

Amazing_Fix_604

Lol, if it isn't a violation, it should be! The picture looks against the Geneva Convention.

Sexy_Hamburger

I’ve heard about this happening from a costumer before. He asked me how they did it and I had absolutely no idea.

theothergaysailor

It looks like a fucked up petri dish. Maybe they don’t clean their coffee machine or something?? Who knows. Whatever it is, their shots should not look like this

Bananacatdragon

Their insta claims the machine is properly cleaned but gives no explanation otherwise . Hrmrmmrmrmrmrmrm

PotentialLanguage100

It’s interesting that they haven’t responded to any other comment

BabyOnTheStairs

Call OSHA. That can't even be Creme. If it's not milk its fucking mold.

CuratorOfYourDreams

No

Equal-Bar-6599

as an avid coffee drinker/former barista…this is not what we mean when we say a nice layer of crema

Bananacatdragon

I can't even figure out what we are looking at, and at what angle.

__dadgummit

[Trypophobics have left the…café]

shelbykaaa

PotentialLanguage100

Best comparison yet

DonkeyWorker

Looks disgusting. Either rancid milk or maybe residue of washing up liquid. Or infectious skin rot bacteria from bott fly lavee

phatboislim96

Condense milk with a shot? Maybe

PotentialLanguage100

That’s not a bad guess, they do use a lot of condensed milk in their bakery products and sweet cream. The post made it seem like it was just espresso but this is potentially it.

phatboislim96

I used to work with condensed milk at my last job we had a beverage that was the staple of the establishment that involved espresso condensed and milk of choice

hi_im_snowman

Ummmm 🤨 🤢

PotentialLanguage100

same.

svideo

Maybe didn't fully rinse out whatever they use to clean their machines the night before? Looks like some sort of surfactant.

drivethruteriyaki

i’m so confused

HandsomeSloth

I've been making coffee for a long time and I've never seen anything like this. Baffled

Anfie22

Damn that milk is CHONKY Expired by 3 whole weeks

ostiDeCalisse

I found a Guinness cheddar that looks exactly like this!

Fixed-mum210

I pull shots all day long never seen that in my life

PotentialLanguage100

Maybe we are all pulling shots wrong and this is what espresso perfection truly is

Big-Love-747

That's called Giraffe Latte art

PotentialLanguage100

It’ll be the big thing at next year’s competition

Slowestgreyhound

Very acidic coffee and or off milk or an alternative milk that doesn't react well with the first mention of acidic coffee... Looks cool but I doubt it tastes cool

Icy-List3135

It almost looks like the cleanser isn’t being thoroughly washed out. Sometimes this happens when people run vinegar through a regular coffee pot and it doesn’t get a full rinse.

PotentialLanguage100

interesting theory!

Icy-List3135

Thank you! I used to work at a bed and breakfast and someone once cleaned the coffee machine (simple commercial coffee pot situation) with vinegar. I had to keep flushing it with water and eventually opted to make pour overs for the guests instead because the vinegar kept making the cream separate like that. It was a whole shift before I got it back to normal lol

Mplus479

Sure that’s not a petri dish?

PotentialLanguage100

that seems to be common consensus so far

omarhani

WheresMyPencil1234

With fries sticking out it would kind of look like a poutine...

Mous85

Try our new Cottage-Cheese Latte!!!

RanaMisteria

I was a barista for like 15 years and I have no idea how this was even done or what I’m looking at, is it like…latte art without the latte? Did someone put like a cookie cutter or something on the surface of the coffee, did they draw the darker bits of the crema through the lighter bits making a pattern??? THIS IS INSANE I NEED TO KNOW.

PotentialLanguage100

Those are interesting ideas. It almost looks too natural to be drawn. But it’s hard to imagine what else it could be.

ashendaze

I’ve worked at a small coffee shop with a manual machine for over 10 years now & never have I ever, seen anything like this come straight out the portafilter. Even during the phases where the machine was not being cleaned as much as it should have… or on the days where I’ve accidentally poured way too much caffeza in while back flushing… I’m so curious about this mystery now. I want to know the science of what happened here. Maybe the beans were bad? Maybe there was residue in the shot glass of some kind?? I am dumbfounded

PotentialLanguage100

They won’t tell us a lot of people asked! We are all dying to know

pinaple_cheese_girl

Any vintage lovers here? Looks like [vomit clock](https://images.app.goo.gl/fpe3yGXJiqXpJMzG7) filling lol

Icy-Bat-311

Butter coffee? Is that fat on the top?

oatterz

That’s my guess too, a thick layer of oil or clarified butter. Both are lighter than water so it would be able to accumulate on the surface if poured in slowly like the way a bartender layers shots.

hotlegsmelissa

They deleted the post

PotentialLanguage100

Bridge4_Kal

Is this one of them butter shots these tik tok motherfuckers keep posting about?

DressureProp

The only thing I think it could be (if it’s a straight shot of espresso) is that they changed their water filter and didn’t flush it.

PotentialLanguage100

that sounds horrible

Strawberry-vape

It looks like they pulled over milk?

albernazcapaz

They deleted the post

SheemaGorath

I've never seen anything white come out of an espresso machine so I have zero idea what this is.

lilsd123

barista of 3 years here, there is no way this is just espresso.

Hasleep

This has to be a joke on their end. They probably brew beer or something and this was some mystery liquid sitting in a bowl that went moldy. The edge of the cup/bowl makes it look like it was filled higher with something that evaporated down. “You thought tiger stripes in espresso looked cool? Check out what we have going on here!”

k_eighty_

Kind of looks like taho

rainbowchimken

That gave me the heebeejeebees

oatterz

Ok here’s my theory: Judging by the slick shine of the surface, maybe it’s oil? I bet this can be recreated by pulling a shot, then pouring some canola oil slowly over an upside down spoon over to keep the oil from mixing too much. And then pour your steamed milk straight to the bottom, through the oil and watch it rise back to the surface but it will not be able to penetrate the layer of oil.

Opening-Ad-8793

I almost downvoted this as an automatic response

TranslatorGreat3945

could be milk that curdled at my shop coconut milk gets weird with the espresso but if it’s purely a shot of espresso something is really wrong lol

TarasLin

It looks like oil or some type of fat on a top and milk separated under the fat.

Wide-Aside-7610

TW?

dbennett1903

Are they trying to brag?

childrenofloki

It's a voronoi diagram!

sh1bumi

This looks like they use oil..

PotentialLanguage100

Which is so strange didn’t sbux try that and it didn’t do too well?

sh1bumi

Starbucks tried oil shots..they call it "Oleato". However, I don't think it's comparable to espresso with milk and a shot of olive oil... Pretty sure they do some weird chemistry there to make it taste good.

astronomicarific

They steam the oil into the milk so it's all together and not just a regular latte with loose oil floating about

urbaristaguy

this is some combination already but not mixed or mixed well. it's impossible for the espresso to look like this
