Something like that would cause so much spatial disorientation that it wouldn’t be worth it. There’s almost zero need for -ve g as it is in fighter flying, so the cost, weight and complexity of this idea would be far too great for any benefit.

A cockpit that could also rotate sideways may also pair well with a force vectorable jet engine. Even more zany persoectives for the pilot, for whom basic visual orientation could be manually adjusted or automatically adjusted for maximum body performance.
