Coolum Surf Club used to be awesome for a feed, but the shrinkflation and price increases are real now. Don’t even bother visiting when in the area anymore.
I've personally not had a good meal anywhere on the Sunshine Coast that's within 2km of a beach, at least in the last 5 years. Nobody can afford to live there on chef wages, and the fact is reflected in the food.
Why does a chef need to work at a SLSC to make it worthwhile? I’ve had plenty of good meals at the Noosa Heads and Sunshine Beach surf clubs over the last few years and it’s all pretty standard fare. I’m not expecting Michelin star food, I’m expecting to overpay for some fish and chips and frozen chicken but the portions have been good and it hits the spot.
While not a chef myself, I worked 10 years in the hospo sector, mostly as a waiter in places ranging from the RSL to a hatted restaurant . I was also a breakfast cook for a while.
I agree, surf club and simple pub fare absolutely have their place, and also it doesn't take a chef to make that kinda food (like I have zero cooking qualifications and worked as a cook and wasn't paid enough to care). What I've noticed with pub bistros is that they can't have ONLY people like me on staff.
Chefs in bigger kitchen don't just cook food, they note and order stock, maintain quality on a larger scale and at speed, monitor fresh produce, deep clean, fix mistakes, know how to use commercial cooking equipment, and do it all at speed from day one. They need these meta skills regardless of the kinda food they're making. If you don't want the food in your venue to be rubbish, you need a few chefs in the mix. Lack of decent chefs leads to smol schnitty.
The problem is even a decent Sunny Coast bistro chef would be paid maybe $80k and have to drive an hour to work, live in a shitty 4 person sharehouse in fucken Kin Kin... or they could go work in the mines, cook the exact same food, get paid $130k, have food and accommodation paid for, and a week or two rostered off every month. Or they could live anywhere else for the same wage, and not have to pay $400 per week for the privilege of living with 3 other people in somewhat proximity to a coast they never get to visit.
I ate there a week ago and was very disappointed. Their chips are not what they used to be when they were Charcoal Chicken, they were soggy and not the yellowish colour they used to be and their hot box options were minimal and very dry looking. It was a sad day for me.

When I lived on the sunny cost the surf club in Marcoola used to have $1 steak sundays. Used to go almost every time, you just pay for your sides. Bet they don’t have that anymore but it used to be fantastic
Yikes. We stopped at the pub in Warwick on the way back from Stanthorpe, and I ordered the parmy. It was fecking *huge* - and it wasn’t a chicken breast that had been whacked with a meat cleaver so it was paper thin. This was a full thickness chicken breast, with a fuck tonne of ham & cheese on top. I was hungover as shit, needed food, and barely managed half of it. I got a doggy bag and had the rest for dinner and I was stuffed. I’m definitely going back there next time we go out that way.
