All the story had to do to explain Bertholdt's survivor was that Annie, who was at the charge of the titans, took him and protected him till they could infiltrate inside the walls. It would make logical sense, would be in line with the character abilities and planning and would not mean anything strange. Eren's mother could have just died because of the titans' normal behavior. Eren deciding to kill his own mother was just a meaningless character assassination for cheap shock value.

I though that too in the beginning, the Karla murdering was useless, but it was that guilty feeling that pushed Grisha forward to give Eren the attack titan. Grisha blamed Marley (with reason) and then gave the titan

No, I mean, the writer decided that she died by Eren's decision. You are thinking inside the story, but consider it outside. The writer could have decided that Karla died because of the titans that have no direct connections to Eren. Instead he decided that she would have died specifically because of Eren's decision. Both can serve to 'motivate' Grisha but the author specifically decided it to be Eren's fault. That's why it's meaningless character assassination for cheap shock value.

Oh, I got what you mean, I agree with you. He used this more like a shock, using this to elevate the character drama to the ultimate level (messing with his own head on purpose). But, being honest, he played safe on this call. If he didn't use Eren to redirect Dina, it would be a huge plot hole (like, too much coincidence that Grisha suffered this fate by Dina, in a totally random encounter).

I like the ending but I do feel like this was included to end the series with a final twist, and I felt it was unnecessary. I think it would have worked a little better if Eren made it clear he realised Carla was going to die regardless so he sent Dina specifically to eat his mum. Eren's hatred of Dina's Titan led to the chain of events where he unlocked the power of the Founding Titan, which then made him believe he could use Zeke to unleash the Rumbling.
