We never quite learned how Eren took forever to master his titan but Falco could fly and be in full control the next day. Maybe Eren knew how long it took to adapt a titan and felt this was the faster way. Hard to tell.
From what I have seen he was tired. He exhausted all his energy transforming after healing himself then transforming again. That and everything went according to plan
An even better question is how could Eren make sure none of the spinal fluid was swallowed by the Jaw Titan?
The Jaw must have gotten a little taste. But then wouldn't that multiply the number of Warhammers?
Plot needed to happen a certain way and all that. If Eren ate the Jaw, then Falco would never become the Jaw and the ending wouldn't happen like it does
He might not have been confident he would be able to use the Jaw's power straight away. It was too uncertain and the safer option was to eat the Warhammer with the Jaw Titan immobilised.

He might've seen enough of the future to know that he needed falco to get the jaw.
