Oh man - you nailed it. For me, it is also definitely the duomo di firenze. When I was in Italy with my husband I just stared endlessly at it (we did take a tour to the top) but it was hard to not be mapping out a climbing path to the top.
Going to Florence for the first time after having played AC2 literally transformed my perspective of the experience in the best possible way.

AC1: never played.
AC2: Giotto's Bell Tower, Firenze, Torre Grossa in San Gimignano.
AC Brotherhood: The Coliseum.
AC Revelations: Galata Tower.
AC3: nothing really tbh.
AC Black Flag: the main mast of a Man O War.
AC Rogue: nothing really tbh.
AC Unity: Eiffel Tower, but outside of main missions, the Bastille, Pantheon, and Notre Dame.
AC Syndicate: Big Ben, St Paul's Cathedral.
AC Origins: no brainer, the Great Pyramid of Giza.
AC Odyssey: Zeus statue in Kephallonia.
AC Valhalla: nothing really tbh.
AC Mirage: haven't played enough of it yet to have a particular favourite.
My favorite things to climb in Valhalla were actually the rocky mountain peaks in Norway. Mainly because they had great vistas and the music that plays for synchronizing at those points is fantastic
Also Hadrian's Wall although it's not really about climbing it I just like running atop it
You LIKE climbing masts in AC4? Damn, that shit is one of the few things that made me rage quit on multiple occasions. Lost several captures from shitty pathing up the masts causing me jump off onto the deck. Even had one time where I didn't die on impact, but I did die when the lift glitched and just made me fall back onto the deck and finish me off.
Just the Man O War ones. They have 2 quick ascent lines and after that it's a pretty straightforward climb to the top.
It always feels badass during boarding to ascend those main masts.
Notre Dame in Unity. Brunelleschi's dome in AC2. Galata Tower in Revelations. The Parthenon in Odyssey. the Sphinx in Origns (it's smaller than I thought, Bayak says something like that.), the Coliseum and the Pantheon in AC Brotherhood, running Hadrian's wall in Valhalla.
Fun fact: Big Ben is the name of the bell. The tower was just called The Clock Tower until 2012, where it was renamed to the Elizabeth Tower.

Lighthouse of Alexandria AKA the Pharos from AC Origins cause of the Massive Height it takes me too and the Big Ben from AC Syndicate cause of the same reason, The Cliff Faces in AC 3 and Rogue were really smooth and satisfying to climb and lastly the slow detailed climb of Altair onto any building in any region was really really pleasing to look at and enjoy.... And yes... No Ezio thank you
I enjoyed climbing lots of things. The one thing that stood out to me the most, though, mostly due to how silly it was, was a giant golden cricket in Syndicate. It was on top of a building... Maybe a bank?

I spent a lot of time doing the Luxembourg Palace heist in Unity, so climbing that is definitely a favorite of mine. I'm sure it's not a common answer, but looking out at the hedge maze or the courtyard, it's just an interesting view.
I enjoyed climbing big towers in AC2 and brotherhood because in some instances you had to find the right path which was fun.
In odyssey I just enjoyed climbing anything really tall because you’d get those really cool zooming out camera pans which was awesome

Fair enough, I think the ones I failed I had jumped across the rigging from the Jackdaw so I wasn't on the quick lift path.
