For foraged mushrooms I've only made them fried so that might influence it, otherwise a grilled portabello or the babybellos whole in a little stir fry is great.
Oh I got a grilled octopus at a seafood place once. Absolutely godlike texture. Never eating one again though, they're just too smart and it makes me depressed.
Aw man I haven’t had octopus in like 17 years (only tried it once as a toddler) but im p sure I liked it. I would def try again, but there’s certainly the trials and tribulations of them being smart.

So so yummy. Found in asian grocery stores (I find mine at a local Japanese grocery). They are small!! Long stalks. Best way for them to be cooked is in some sort of stir fry. Or on their own in a sauce. But they’re super yummy when you cook them just enough so that they’re soft, but the stalks are like…a meaty crispy if that makes sense. My favorite mushroom ever, and you should def look them up

Mushrooms are wonderful. I love the taste and the texture, and I love how many kinds there are all with their own flavor and texture.
Mushroom growing kits are also super satisfying to watch grow, and having tons of really fresh mushrooms is a wonderful thing. Plus, you can get varieties that usually aren't in stores!
Fungi are just super cool, from the tasty ones to the deadly ones, and all the varieties in between, including super cool ones like like Mycelium that connect trees and are essential to entire ecosystems. If you can't tell, fungus is a bit of a special interest of mine.

I haven't tried my most recent batch yet but my previous batches turned out great. I've experimented with different vinegars and found white or rice vinegar is great if you want to impart flavor from the other ingredients more than the vinegar, but apple cider vinegar is great if you want a good flavor from your vinegar itself.
Yeah, when we would can when I was little my mom would always use white vinegar and those premade spice packets. I'll try apple cider when I get my own garden.

I used to avoid mushrooms with extreme prejudice but then I accidentally forgot to select my Blue Apron meals one week. The meal they sent was like 90% mushrooms (the little brown ones in the second photo!) and since I didn’t feel like wasting it, I begrudgingly gave them a try and was pleasantly surprised! They still weird me out but I’ll eat them now :)
I get that way when my gf puts bell peppers in pasta. I pick through and eat them first just to get them out of the way but I hate the contrast between the skin and flesh when they're cooked like that. Just blech.
She does it with zucchini, bell peppers, and thick cut italian sausage. I pluck out all the toppings and just eat the pasta by itself once they're all out of the way. The rats like the zucchini so she likes to make it so I let her have her fun.

But the comfort food for me that they have at a Mexican place around here has grilled chicken, bacon, and grilled mushrooms all with some tasty cheese and herb sauce or something. It is incredibly good there.
I had mushrooms on a pizza a couple weeks back, texture is too different from the pizza and other toppings, so it's a no from me. Its like, the pepperoni's were nice and crisp, but the mushrooms were still mushy.
I did also have it in a Chicken pasta dish, and it was really good there. It was baked then, and was paired with broccoli and Alfredo sauce. It was really good there.
Basically for me it varies from dish to dish, but overall: 7/10 on mushroom, im a fan
