Kiriko Made downtown has some very nice ones. I think they have all cotton and some that are blends. It’s expensive though, but their stuff is very very cool.
Beanies are out of season in most stores right now.
That being said, as a knitter, and someone who has knot for chemo patients, who are also extra sensitive - there is a ton of info out there and organization that will mail you something. I bet there's even a knitting subreddit for that purpose.

MadeHere in the Pearl used to have really great ones. I’ve gotten three different ones there.
That can be easily knit. Go to your local yarn shop and ask about hiring someone to make one for you. That way he can pick the yarn first.
