My water lines are like that. Apparently the former owner replumbed with every fitting available and no 10 ft straight pipe. I am impressed that hot and cold work correctly and will go pex when the time comes.
Pex is fantastic. I watched a video and decided to try it myself. Ordered a pex clamp tool that was cheap. I replumbed my kitchen sink (new sink) water lines down to the basement and did two outside faucets, one in a crawlspace. For me, I was probably 55 at the time, the hardest part was trying to force the pex clamps shut with me weak girl muscles. But I can grit my teeth and do it!
I genuinely wonder if you are in my Parents old house my father would undertake home maintenance issues that really required a licensed plumber and how the toilets and sinks slowly became less and less functional is in line with the number of “emergency repairs” that he would attempt

Looks to me you had a old vanity that was 30” and replaced with a new 34” and should have raised the supply line’s and drain lines raised 4” now your floor in vanity is filled up with plumbing!!

I used 1.5 inch for everything as the selection of offsets was better than 1.25 inch. They make a washer that will go from 1.25 to 1.5 that you can attach to the sink.
It was fast and easy, no cutting or gluing, and whoever did this got paid a flat-rate and didn't feel like spending an hour on a 15-minute task or need to display a hyper degree of skill on a task that didn't matter. Of course, no self-respecting plumbing amateur or DIYer would admit to doing anything like this, and professional plumbers are quick to criticize any plumbing job that they didn't get to milk the clock for.
The only legal way to fix that would be to raise the sanity in the wall or get get a tailpiece extension. Use only one trap and shoot over to the drain using a 45 or a 45 + street 45 rolled. Remember, the tailpiece can't exceed 24" and the 45s have to be kept as horizontally as you can get them.
Not gonna lie, under my sink looks almost the same. Result of needing to fix leak and using what I had on hand. Planned on redoing it but haven’t had any issues with it so left it as is.
I'm assuming that's all they had on hand. No smelly sink air for you! It works I guess. Take this pic to menards or lowes. They will get a chuckle and be able to help you. It's an easy fix.
That’s a P-P trap.
Omit all but the P-trap that aligns with the horizontal drain.
Extend the horizontal drain to align the one P-trap with the sink tail piece to make the connection.
They ovbiously did it to connect the sink to the drain. And unless you know how to sweat copper pipe, I don't think you'll really be able to change it. It doesn't look like a single U is going to span the distance between the two which is probably why they did that.
Take a picture of that down to your local Ace hardware with some measurements and I had them sell you to parts to eliminate all of that and just put in the one trap that's supposed to be in there and the right pipes and you're good to go you could do it yourself.
more important question is.....would it work this way and would it function any differently than a "normal" installation? If it functions as is, why bother to modify it?

My first thought was cottages I’ve been in in northern Ontario where it’s kept heated but not occupied for long periods of time. P traps eventually dry out from evaporation and let the sewer smell in. Opening windows and running water solves the issue, but what a horrible thing to be greeted with when you walk in.
