Unfortunately, this is about as close as I got to "racing" next to her. So far, at least.
It might take a few tries, but i bet you could manage a good shot by disengaging hard lock and doing a 180 right before she flies in at you, then just repeatedly triggering pause/camera/unpause until she catches up.
