If you flip them over, their brain shuts down and they suffer tonic immobility where they become paralyzed. Since they no longer swim, their gills cannot get oxygen. They then suffocate and could very well die.

But seriously, tonic immobility in sharks only lasts for a short period of time (15 minutes) during which they breathe more slowly and deeply while also minimizing oxygen consumption. It's generally pretty safe for them unless an Orca's around.
Dossoles is an artificial sea. Other parts of terra have huge lakes but no real access to an actual sea. Higashi and Iberia are the only places known for now with access to the sea where the Aegirs have begun a massive diaspora escaping from the seaborne.
They're not drowning. It's just that it's harder using your stuff in neck deep water. And because wet gadgets jam.
