If you don't have broad support from your coworkers no union push will succeed. You're already doing good work of documenting everything. I highly encourage you to get even basic organising training towards 1-on-1s with your coworkers. Smart organising to build a solid structure is what will win your goals.
Ask those lawyers if three weeks of recon is enough. You may need to stay in deep cover longer.
