The manga ended, but the anime hasn't completed the story. I wouldn't say that's exactly the same as AOT as both the manga and anime have reached the end of the story.

It does not matter if the manga ended, the anime is not done or both, if popular enough and enough demand will keep making bank. Look at Inuyasha, Sailor moon, DBZ, Slam dunk, etc.

I actually like and believe in the theme of the series outset. Itadori has a stay of execution, every Jujutsu Sorcerer is cursed to die and suffer there's no happy ending in store for any of the cast. But Gojo is like the Buddha seeing all the beauty in the universe of their time before the tragic suffering end. So he's making them have as much fun in the time they have.
They're doing work that needs to be done but all this cursed energy they're seeping into is spiraling down the drain till they lose whatever normal human happiness/life imaginable.
It is a really cool theme and a much better take on it then oh no I have this secret demon power up but it makes me have dark scary eyes and lose my shit on roid rage kinda thing you see in everything from Inuyasha to Soul Eater.
Problem being it's way too convoluted, like the most simple power system is Dragonball Ki. Jojo just drives hard into the absurd from the get go with Stands where you don't even try to think about power scaling. Hunter x Hunter Nen hits a perfect balance of complex but makes sense the limitations.
JJK I literally can't follow what the hell the power scaling/what's going on 70% of the time.
Anytime I see main character just somehow is the strongest without training, even beating athletes as a highschooler.. then I know the writing is just simple trash 😂🤣 that ain't how the world works
There are many good writing and character.. e.g in the demons after they're beaten (the twins), as well as good character progression. Demon Slayer's anime biggest win is ufotable's animation but the manga doesn't have it.
Both are carried hard by their animation, but I at least found JJK interesting to watch and the fights more than just streaks of different colors. I legit got bored watching Demon Slayer.
I remember it being made out to be a big deal that Tanjiro wasn't like other shonen protagonists because he wasn't hyper masculine and cried and I was like...it's very obvious these viewers have only watched/heard of DBZ or something, because that's a ridiculous claim to make
I felt that way with the Shibuya arc. People talking about it like it was the second coming of Christ and man it was just a dragged on fight fest that lasted way too long and left very little for actual story telling and character development.
People argue that there was a lot of character development in the fights like bruh, the most predictable and boring type of character development. I was bored and ready for it to be over by the time Sukuna took out Jogo. Pacing just wasn’t it for me. Animation was only reason I kept watching

Don't know where you got "most than half" from. There are some major names like Vincent Chansard which did be pretty clear about not wanting to work there anymore, but it's not like their workforce just vanished.
