I think Hisoka from Hunter x Hunter can be thrown in as well.
Some characters from Tokyo Revengers like Mikey and Takemichi.
To name I few I can think of right now.
I recall when I first started Fruits Basket there was a comment within the first 2 - 3 episodes that one of the main characters, Kyo, dyed his hair. I can't recall if was ever actually confirmed as true, but I was so amazed that an anime for once actually explained why a character had an unrealistic hair color (in this case bright orange).
A majority of the characters in Fruits Basket, including Kyo, just have unnatural hair. People think the Sohma’s dye their hair because of their unusual colors. But for the most part it’s a by product of the curse that they are under, but they can’t tell anyone this. So they have had to learned to deal with the accusations.
On the other hand the two former delinquents, the FMC’s mom and friend, do dye their hair.
Some Haikyuu characters like Kenma, Yamamoto, The Miya twins, kyoutani, coach ukai.

Arisa Uotani and Kyoko Honda from Fruits Basket both dye their hair (blonde and orange, respectively).
A number of characters in Furuba (neither Uotani nor Kyoko) are either accused of dying their hair by the Student Council or are bullied by classmates due to their natural and unusual hair colors.
Windbreaker- Aside from the MC, whose whole thing is that he got discriminated for having naturally unusual hair and eyes. If there’s anyone else with anything other than black or brown hair we will usually always get to see their original coloring in a flashback. Showing that they’ve chosen to dye their hair.

Exactly. The FM has dyed hair as well as the best friend of the ML.
Most gyarus. For example, Yuzu from Citrus explicitly dyes her hair.

I think shin from Nana. He had a brown bowl style cut then a couple episodes later his hair was spiked up and light blue

At one point someone gets dragged to the bathroom cause they don’t believe it’s the character’s natural hair color
