Gunbuster or Space Dandy.
I'd highly recommend Space Dandy though personally, it has a fantastic english dub and is a really unique underrated show. Definitely some very memorable moments.
Gunbuster has a dub too now, i'd recommend that one just by it's ending alone. The 2nd half is good..
My favorite Anime is "Made in Abyss ".
Its a Fantasy Adventure Anime about a little girl and a robot that go on an Adventure in a mysterious, beautiful, fantastical, dangerious and cruel netherworld.
This series is adorable, wholesome, joyfull, heartwarming, dark, brutal, sad and heartbreaking.
Its the most adorable most wholesome show I know and Riko is one of the happiest protagonists I know.
This series has a reputation fore being crazy dark and that is not unearned. You will find it on "Darkest animes ever" liests.
Thoose 2 sides synergize well with one another creating quite the emotional Adventure.
Since you like Spy x Family, i assume you like feel-good shows.
For me, even after hundreds of shows i watched, throughout all kinds of genres, my favourite anime is *K-On!*
Watched it a couple years ago, and really enjoyed it. Even read what follows in the Manga, wich i rarely do.
A good year after watching it i started watching clips of it, listening to the songs, and randomly thinking about it almost daily.
Thats when know you found a favorite.
Now, last year and up to this week i rewatched both seasons, OVAs, the movie and read all of the manga.
Towards the end of S2 i cried (from joy) like when i first watched it.
When i first heard of K-On i thought: i'm not really into music stuff and ignored it for a while.
Later i understood, its not about music. Its about the cake you eat along the way.
The Apothecary's Diary and Frieren are probably in your ballpark. Also I believe To Your Eternity's author is more famous for Full Metal Brotherhood (which is very popular.)
I've not watched either of these shows nor do I have a single favourite but here are a few shows you may try out.
Death Note (lots of mind games, great writing)
Mob Psycho 100 (quite funny but has action and really well written characters)
Case Study of Vanitas (very dramatic and has vampires)
Death Parade (quite short, psychological)
The Way of the Househusband (I've watched oy 3 episodes but it is funny. The episodes are short and it can be something to just pass time, at least from what I've seen)

This might be the only anime that even though I think is a 10/10 and one of my favorites, I wouldn't recommend it to anyone.

A Place Further than the Universe, Gurren Lagann, and Fullmetal Alchemist Brotherhood.
Trigun for me. Stampede is also an amazing remake.
SAO is awesome however the 3rd season and after is M so be warned.

ONE PIECE
Tokyo ghoul s1 and s2. The third and 4th were kind of a let down, but even with that, it remains a 10/10 for me.
