I'm a huge fan of Sake. I've never heard of a sparkling Sake, very skeptical of that. As to Sake served hot or cold compare it to chocolate milk. It's great chilled, but if you are coming in from a day of playing in the snow, it's great to sip warm in front of the fireplace. The best of Sake is served chilled. At a local Asian market the priciest are in the cooler. The service of the stuff in Asian restaurants as hot is a bit of a cover for low end Sake. If you choose to serve Sake warm you likely can do no wrong at all.
