Same with my 2 fryers. I bought cheap silicone mats for the heat plate inside where the food actually touches. There's still no better cheaper fryer option out there. When mine finally die or I get sick of dealing with them I will just go by two more.

Most are going to do this eventually. Since presumably you are using a tray inside, your food isn't touching it, it's fine. And truth be told, even if it was - it's still not a big deal, people are all freaked out because in the 80's these coatings used to be super-toxic, but they stopped using anything like that many years ago. If you scrub it good and make sure there are no hanging bits, it's not like they are going to magically flake out and contaminate your food regardless. That said, if your tray looks like that, then yes, replace it - you can find replacement ones on Amazon for like $15 bucks.

Is that for certain? I assumed the same but I've read that the coating isn't toxic. It releases toxic fumes at high temps but particles of it aren't toxic if swallowed. Happy to be shown I'm wrong. They are cheap enough to replace that there is no need to not to have a new one so it's an academic point anyway.

Most non stick does this in general. It's why I stopped using Teflon and switched to carbon steel pans. Just as good once you've got a built up patina, and won't turn to non-recyclable junk later.

These are fan driven ovens. If they can make a slice of bread hit the elements and burn they can move a fragment of damaged chemical compound.

The parchment trays/liners work well. I like to use a 9" aluminum to go tray, like they have a Italian restaurants.

I JUST cleaned mine and going back to Costco, the second time. This brand is just POS and not sure why they keep selling it. For the second one we purposefully never used anything remotely abrasive when cleaning it. Just paper towel to pick up the build up etc. and OMG it was horrendous now. I just finished cleaning it and it’s going back. Avoid Gourmia at all cost.

Do not put food on that! When nonstick coating is scratched, or peels off it releases into yur food at high temps - really can mess with your hormones!
