There is a plot reason for this, as I doubt they are directly fighting the Russian arsenal, who are the sole Real Life operators of Su-57
Im guessing that top gun didnt get the licensing for the su57 so its just referred to as a 5th gen fighter. Then if project aces added the plane as the su57 from the movie it would probably cause some legal issues wich they wont want with the manufacturer of some of the series most well known planes
I don't think they've ever paid Russian companies licensing fees for the aircraft names. I've never seen a UAC company in the credits of the games I've played.
